I'm officially a member of the thigh high club (not to be mistaken for the mile high club), i've toyed with the idea of thigh high boots for a number of months and because I slob around in trainers 99% of the time the idea of actually looking lady like and put together scared me shitless! However the lovely people at 4th & Reckless hooked me up with these super sexy, grey beauts and I can truly say i'm a changed woman!
I think they are the perfect addition to any outfit, they can be worn over jeans, leggings, with skirts, shorts, dresses the choices are endless. 
I chose to wear mine with my Police band t-shirt (I do have shorts underneath to hide my modesty when I bend over) and my sheepskin jacket to keep warm.
I can't wait to rock these babies on Valentine's day with a shirt dress.

THE CANDLE OF ALL CANDLES

I know, Christmas is over, why am I blogging about a festive candle you ask? The reason is because this beauty has lasted so bloody long and I'm SO in love with it that I needed to let you guys know all about it and also it's still Winter so whats wrong with keeping the place cosy?
I received this Crabtree & Evelyn Candle early in December,it has been burning everyday since and is still only half way down the jar, impressive huh? It smells heavenly, not your typical sweet and sickly festive scent but more so of hints of Pine, Bark and Bonfires, all round quite a masculine scent.

The fact that it has three wicks is my favourite part, it burns evenly and you don't get any wax left around the edges, there's nothing worse than a candle that lasts 5 minutes and all you're left with is a sooty, black mess. I have loved burning this over the festive period and will carry on doing so throughout the new year, quite frankly I don't want it to end! 
If you're a sucker for a good candle and want to hibernate in coziness for the next few months then I highly recommend this little gem!

MANGO WISHLIST


It's fair to say that Mango has fast become one of my favourite places to shop, only when stumbling in there a year or so ago I first realised what I was missing. The clothing is such good quality, the price point is great and they cater for all styles from smart to casj, mens and kids, it truly is a one stop to kit out the whole family but more importantly, to kit ME out! My closest store is about an hour away which is quite frankly is a pain in the arse but I have recently discovered my local House of Fraser (10 mins away) stocks it,WINNER!!

Here is what I'm currently lusting after, can you tell i'm ready for summer! Anyone else?

KATECOOKS : QUICK & HEALTHY SALMON STIR FRY

I posted a picture of this super simple, healthy recipe over on Instagram and lots of you asked to see a healthy recipes series on the blog and hey presto, your wish is my command. This has been my failsafe lunch this past week, it's extremely versatile, you can use any Veg that you like, put pretty much anything on the salmon (within reason) and if you are on the go you can make it the night before and eat it cold, winner!

:YOU WILL NEED:
+ 1TBSP Sesame Oil
+ Veg of Choice Spiralized or Thinly Sliced
+ Fillet of Salmon
+ Salt & Pepper
+ Sesame Seeds (Optional)

:HOW TO:
1. Wash your vegetables and start cutting them into long thin strips, I use a vegetable peeler or you can spiralize them if you prefer. Toss together in a large bowl and sprinkle with Salt & Pepper, I also used chilli flakes on mine to add a bit of heat.

2. Line a grill pan with foil and place your Salmon in the middle, at this point you can drizzle some oil over, add the juice of a lemon,S&P or any herbage that you wish, the choice is yours. Pop under the grill and cook for around 5minutes depending on the size of the fillet, stick a knife in to check it's done all the way through, fish doesn't take long to cook so make sure it doesn't burn!!

3. Pop 1TSBP of Sesame Oil into a Wok or Large frying pan and heat until it smokes, add your Vegetables and toss, you want them Al Dente and not soggy so make sure you only fry them for a few minutes so they retain their crunch and don't forget to sprinkle over your sesame seeds at this point.

4.Turn out into a pre-heated bowl and once the Salmon is cooked place on top. Garnish with your preferred herb.

TADA.. There you have it, A quick stir fry which tastes incredible and is guilt free.
If you taking it to work or school the next day let it all cool down fully, place in a Tupperware box and pop it in the fridge overnight.

NEW YEAR RESOLUTIONS

"Oh god" I hear you cry, "not another fucking New years resolutions post"...am I right?
I did think before I was about to write this that I will probably bore all my readers to death with this however I think its healthy to make a note of your goals wether it's on your phone,on paper, on your blog or even social platforms it's a good thing to do. (Also I need a nice easy post to write to get me back into the swing of things after the holidays) I am making this post solely for myself to look back on but if some of you enjoy it then we've killed two birds with one stone. 
Oh and Happy New Year by the way.

Without further ado here's what I want to achieve in 2017:

+ GET OUTSIDE MORE
I remember as a child I used to be outside 99% of the time, we didn't have computers, phones or ten tonne of toys and looking back now I have days where I wish that was still the case, as much as I love the internet it can really suck you in and control your life. In 2017 I want to get outside more, go for walks, explore new places, even walk to the shops rather than driving, I think we take the great outdoors for granted in this day and age and I feel it's time to appreciate the real world, not spend hours ogling some girl on Instagram that is better looking than us and wishing we had her life.

+ GET MY BODY BACK
Yawwwwn!! You hear this every January I know, but I mean it this time. I've got to a stage where I feel uncomfortable in my clothes and it's time to get back to the size I used to be. I think getting comfortable in life isn't always the best, for e.g.: I have been with Paul for 3 years now and have been that relaxed that I haven't even noticed myself putting weight on, he doesn't care but I know in myself that I'm not healthy (and my stomach hangs over my jeans) and want to change it up in 2017. (Plus I'm a bridesmaid for two weddings this year and want to look marginally decent not like a giant slug).

+ DON'T WORRY
I'm such a worrier, always have been and unfortunately probably always will be, usually over stupid things and things out of my control, I've learnt in 2016 that it gets you nowhere and usually turns out better than you thought in the long run anyway so in 2017 my aim is to sit back, chill out and let things happen naturally without being a big fucking baby about everything all the time.

+ WORK FOR MYSELF
I've always dabbled in and out of jobs and completely and utterly hated working for someone else and big companies just so I can line their pockets with more money than mine, I'm one of those annoying people that hate being told what to do and take everything to heart so am a total pain in the arse to employ i'll admit, however I have taken it upon myself to go full time into blogging with an exciting project on the side which I will update you on when it launches. 2017 will require a lot of work, time and effort but I cant wait as its all off my own back and I'm so proud of how it's all coming together.

+ SAVE
We all know the feeling in the pit of our stomachs when we look at our online banking and see how bloody skint we are and the realisation that we saved next to fuck all last year...yeah? I know for sure that I need to start saving, wether it's for an emergency, to fund travel, pay bills, whatever it is, these days it's absolutely necessary. I will be making a conscious effort to save in 2017. (and hopefully have a banging holiday at some point).

So those are just a few of my New year resolutions, if i'm completely honest I come up with a new one every day, but these are the top 5 things I want to conquer in 2017.

LAST MINUTE STOCKING FILLERS FOR UNDER £10


If you are anything like me you will still be doing your Christmas shopping!! Every year I promise myself that I will be super organised and have everythjing sorted by early November, however this is never the case and I'm left stuck with what to buy that awkward distant relative that I never see who's choosing to show their face this Christmas, battling with huge fucking crowds and quite frankly hating every minute of what is meant to be an enjoyable thing. 
The answer to all our woes is online shopping, we still have time to order before the big day and I've piled together 12 items from ASOS under £10 for those stockings that still aren't quite full enough, those awkward to buy for people or the person you've been given for the office secret santa who you quite frankly cannot stand.

Apologies for being a tad MIA lately, it's been a hectic couple of weeks for me however aside from the massive work overload I managed to squeeze in a trip to my favourite show of the year,The BBC Good Food Show
I was extremely lucky to receive a press pass this year which I was (and still am) extremely grateful for, never did I think I'd be wearing a press pass to my favourite weekend out, lets just say it made me feel like a pro haha. Paul and I smothered this on our faces after getting off a flight last week and we both felt instantly refreshed, also the smell is incredible, i'm not usually a fan of rose scented products as they can smell so false but this is like strolling through a rose garden, it's beautiful.


So there you have it, a round up of the Superfood masks from The Body Shop, I cannot fault any of them, it's very rare you try so many products from the same line and like them all, obviously I have a few stand out favourites being the Ethiopian Honey,British Rose and Chinese Ginseng,but overall I love them all and highly recommend them.

KATECOOKS: SALTED CARAMEL BROWNIES

On the odd occasion we like to indulge, particularly around this time of year, and why the hell not? There’s nothing quite like sitting down with a cup of tea, a magazine and a tasty treat. My personal favorite are my salted caramel brownies, oozing with sticky goodness and let’s be honest, who doesn’t love a brownie?  If you are a chocoholic like myself you need to make these.

BROWNIE MIX
95g Cocoa Powder
300g White Sugar
2 Eggs
170g Unsalted Butter
70g Cup of Plain Flour (Sifted)
1 TSP Vanilla Bean Paste
Handful of Milk Chocolate Chunks

SALTED CARAMEL
110g Granulated Sugar
85g Unsalted Butter
110ml Double Cream
1 TSP Sea Salt

For The Salted Caramel

1. In a saucepan, heat the sugar for around 5 minutes, don’t stir until it has started to melt and then just enough to keep everything evenly cooking thereafter. You should end up with an amber liquid, when this happens remove from the heat and stir in your butter, it will bubble like crazy, just keep stirring. Use a whisk to combine the Sugar and Butter this will take a couple of minutes just bare with it until completely combined.

2. While still off the heat pour in the double cream and sea salt. Depending on how salty you want it is up to you, be careful when tasting though as its like molten rock and will burn you if not careful. Place back on the hob for a few seconds to warm through, stirring the whole time. Remove from heat and allow to cool for 15 minutes.

For The Brownie Mix

1. Preheat oven to 160degrees (In fan Oven) and line an 8"x 12" baking tray with parchment paper.

2. In a pan melt the butter. Stir in sugar, eggs, Salt and vanilla bean paste, fold in he sifted flour and Cocoa powder. Once combined sprinkle in your chocolate chunks and gently fold through.

3. Pour half the brownie batter into your lined baking tray, making sure it’s to the edges. Pour half your salted caramel over the brownie batter making sure it doesn’t go to the edges of the pan, I kept mine about an inch from the edge otherwise it will leak out and burn whilst cooking. Spoon the rest of the brownie batter over the top, sealing in the caramel. Take remaining caramel and drizzle over the top to create any pattern you wish.

4. Bake for roughly 30-40mins. Remove from oven and allow to cool down completely. Cut into squares and enjoy. Best served with a steaming hot cup of tea.
