KATECOOKS: HALLOWEEN BUTTERNUT SQUASH & SPICY CHORIZO SOUP

P1080996:YOU WILL NEED:
.1 Butternut Squash
.100g Chorizo Chunks
.25g Butter
.1 Onion
.1 Red Dried Chilli(deseeded)
.5 Fresh Sage Leaves
.650ml Chicken Stock
.2 Cloves Garlic
.1 Tbsp Olive Oil
:HOW TO:

1.Melt butter in a saucepan,add chilli,onion,garlic and sage,cook until softened.
P10809522.Peel and deseed Butternut Squash,chop into small chunks and add to the pan.
P1080958P10809633.Pour in chicken stock,cover and simmer for 30 mins or until squash is soft.
4.Meanwhile,chop chorizo into small cubes then in a separate pan add chorizo,garlic and oil,fry until brown.
P1080979P10809895.Blend soup,season to taste,add leftover oil from the chorizo pan and garnish with the chorizo chunks.
