: YOU WILL NEED :
.1TSP Baking Powder
.1/2 TSP Sea Salt
.96G Plain Flour
.2 British Lion Eggs
.43g White Sugar
.1 TBSP Light Brown Sugar
.1 TBSP Honey
.2 TSP Finely Grated Lemon Zest
.6 TBSP Unsalted Melted Butter
.Sunflower Oil Or Spray Oil (To Grease Tray)
.Icing Sugar (To Dust)
1.Combine Salt,Baking Powder and Flour in a small bowl.Then in a bigger bowl whisk the Eggs,White Sugar,Brown Sugar,Honey and Lemon Zest until it reaches a smooth consistency.
2. Add The dry Ingredients along with the melted Butter and stir until smooth.Cover with cling film and pop in the fridge for an hour to cool.
3.Preheat the Oven to 180 (fan),lightly coat the madeleine tray with vegetable oil or spray and Dust with flour,tap out any excess.
4.Using a teaspoon scoop the batter into the tray filling two thirds full.(don’t over fill as they will be too big).Pop in the oven for 8-10 mins until the edges are golden brown and the centre springs back when gently pressed
5.When cooked take out of the oven and allow to cool fully on a cooling rack.
6.When cooled dust with icing sugar and grate remaining lemon zest over the top.
