We all love a quick and easy meal and there’s nothing worse than getting home from a long day at work to find nothing in the fridge apart from some old furry veg and the remains of that stinking cheese which you thought was a good idea at the time but should have been thrown out a month ago!! Trust me, as much as I love food and I love to cook, sometimes after a day at the office I just cba, so this is where Mindful Chef comes in and saves the day!
 Mindful Chef is a subscription box which delivers the freshest of recipes right to your doorstep using ingredients sourced from local Devonshire farms (you don’t even have to leave the house, WINNER!) I have teamed up with them to show you guys just how easy it can be to cook from scratch and include healthy/new recipes into your lifestyle, it’s not rocket science and it will stop you caving in and reaching for spaghetti hoops on toast, I know…. We’ve all been there(!)

The idea behind Mindful Chef's recipes is to cut out refined carbs and to reduce our intake of sugar, both of which are things I used to binge on but since changing my diet at the start of this year and making a conscious effort to cut down my carb intake this box immediately stood out to me and I think it's a genius idea, it's all about being Mindful (as the name would suggest) about what you are putting in your body, for example, love white rice but hate the bloated slug it leaves you feeling like? Swap it up for something like broccoli/cauliflower rice, it's SO good for you and if i'm honest it tastes a million times nicer, after a month of cutting rice out completely I don't even miss it, a very bold statement from a former rice fiend(!) One of my favourite dishes was actually the one above which is the Sri Lanken-Style Curry & Broccoli Rice, it was abosultley delicious and we have made it a few times since.

We have been trying different recipes from Mindful Chef over the past 4 weeks and I can truly say that it's the best food box we've tried (we have tried a few) all the ingredients are extremely fresh, everything is already weighed out for you and there is zero waste (Massive bonus), they cater for all diets, meat eaters, vegetarians, vegans, the recipes are so well thought out and are very innovative. We have loved creating these meals too, they are very quick, easy, fun to make and super yummy, oh and let's be honest they are pretty damn photogenic too don't you think? 

If you are on the look out for new recipes or want to change your diet then Mindful Chef is certainly for you and great place to try new things (!) I will be sharing some of my favourite recipes with you soon so watch this space.

  2. Try some fresh green beans. They are loaded with flavor, delicious to savor and best of all they are loaded with good for you nutrients.
