C'mon admit it, you feel like a massive slug that has had all the hydration sucked out of it and you can't bring yourself to look at another mince pie let alone those tubs of cheese snacks you still have lying about the place, am I right? Well if you are anything like me, you, yet again over indulged throughout Christmas and feel the need to get a bit of goodness back in your body (i'm still warming to the idea of exercise so salads will do for now) I've come up with 3 super healthy salads which aren't bland at all, if you want to get back on track or just need a bit of a pick me up then look no further...and what's even easier? you just chuck it all in a bowl, perfect for packed lunches, to enjoy on the go or to chow down on at home(!)

SWEET POTATO & SPINACH
I'll admit it, it's taken me a while to come to terms with Sweet Potato, not sure why, it's just not that buttery spud filled with cheese and beans is it? but hey it's beautiful in it's own right....
Handful of spinach
25g Cooked Red Rice
5-6 Sprigs of Tenderstem Broccoli
1 Sweet Potato
A Few Slices of Red Cabbage
Drizzle of Olive Oil
Juice of 1/2 a Lime


SALMON & AVOCADO
Probably one of the best combinations of all time don't you think? I try and get a few avocado's in my meals each week and i'll be honest, i'd have one with every meal if I could... 
1 Fillet of Salmon (Grilled)
Handful of Rocket Leaves
1 Avocado (Sliced)
1 Spring Onion (Thinly Sliced)
Handful of Pine Nuts
Drizzle of Balsamic Glaze
Drizzle of Olive Oil
Salt & Pepper to taste


CHICKPEA & MOZZARELLA
A strange combo, but super satisfying, a salad that is hearty, full of goodness and you still get to eat cheese, it's all about moderation, what's not to love?....
Handful of Spinach
1 Carrot (Peeled)
1/2 Tin of Chickpeas
3 Radish (Sliced)
1/2 Ball of Buffalo Mozzarella
Drizzle of Balsamic glaze
Drizzle of Olive Oil
Salt & Pepper to taste


As always my recipes can be adjusted to suit your dietary requirements, Vegan? take away the cheese and add Tofu or vegan eggs... Vegetarian? Take away the fish and add more veggies or pulses and if you're a meat eater add some chicken or beef, the possibilities are endless!
