Do you ever have those days where all you think about is pizza? If you’re anything like me then those days happen quite a few times throughout the week and when trying to maintain a healthy balanced diet, four pizza’s in seven days really isn’t ideal, however I have come up with a solution, it’s not groundbreaking nor is it 100% healthy but it kicks some of those carbs in the bud and makes having mid-week pizza a somewhat healthy choice. Whatever your favourite toppings may be, you can opt for this low-carb tortilla Pizza base and the flavour remains delicious, here’s how.
ALDI SHOPPING LIST
2 x Wholemeal Tortilla Wraps
1 TBSP Red Pesto
1 TSP Tomato Puree
Handful of Rocket
Handful of Grated Cheese
1. Lay 1 Tortilla on a baking sheet, mix pesto and tomato puree together and spread half of the mixture over the tortilla making sure you get right to the edges. Place the 2nd tortilla on top and cover with the rest of the pesto mixture. Sprinkle with a handful of grated cheese.2. This is the fun part, just like any other pizza you can cover it in pretty much anything you like. My favourite is a classic pepperoni with mozzarella, veg and rocket. Add all your favourite toppings and pop in a preheated oven (180C Fan) for around 10-15 mins or until the edges are crispy and all your toppings have cooked through. If you are putting a garnish on (Rocket/Basil) wait until you’ve removed it from the oven otherwise it will wilt and burn.
3. Sprinkle with some Parmesan cheese and a drizzle of Balsamic glaze and enjoy your easy low-carb tortilla pizza.
