
Pancake day 2020 is fast approaching! Hands up if it’s your favourite time of the year? Most years I stick to the traditional and easy lemon and sugar pancakes so this year I thought I would rustle up some super fluffy banana and oat pancakes for a change, I wanted to make these ahead of the day to make sure everyone in the house liked them and it turns out….they are a winner! Here’s how to make my Healthy Banana Oatmeal Pancakes.
: YOU WILL NEED :
1 x Large Ripe Banana
2 x Eggs
1 Cup Organic Porridge Oats
1/2 Tsp Cinnamon
1/2 Tsp Vanilla bean paste
1/2 Tsp Sea Salt
1/2 Tsp Bicarbonate of Soda
Splash of Almond Milk
Berries for topping
The Groovy Food Company Agave Nectar

: HOW TO :
1. Pour all ingredients into a blender or Nutribullet and mix until everything is combined. It should be a moderately thick consistency, if it is too thick add more almond milk to loosen it but don’t go too mad as they need to hold their shape in the pan.
2. In a small saucepan add a tiny amount of butter just to grease the surface, pour in the mixture to create small pancake shapes. Cook until you can shake the pan and the pancake moves freely, then take a fish slice and flip it over to cook the other side.
3. keep making pancakes until the mixture runs out, you can top them with anything you like, I’ve chosen to make easy fruit pancakes but you can add Chocolate, Nut butters, Nutella, lemon & sugar, Caramel, whatever floats your boat.
4. Serve while hot and Enjoy!
