This quick recipe is for all my veggie lovers out there. It’s a take on a burger but without the bun, perfect for those days when you don’t want the added carbs or are just craving a really tasty plate of salad. I’m using the delicious Linda McCartney Mozzarella Burgers for this recipe, if you haven’t tried them before and want a meat alternative then these are awesome! I’m not going to sugarcoat this recipe, It’s pretty self explanatory and easy, it’s a burger piled on top of lettuce, beef tomatoes, mini pickles, sesame seeds and some ribbons of carrot (mainly because I had carrots that needed using, but you can leave them out if you don’t like them) all finished off with the new Hellmanns Vegan Mayo, which can I add, tastes no different to the non-vegan one, try it, you’ll be amazed!

I’m not convinced this recipe needs an ingredient list, or a step by step guide all I did was drizzle some olive oil over the lettuce, added some salt and pepper, a few chilli flakes and some sesame seeds. Peeled some ribbons of carrot, added some tomatoes and spring onions, cooked the burger and added some mini pickles and some mayo, simple as that! You can switch up the ingredients to your liking, maybe add some avocado or a dollop of hummus. Just experiment, I find the best salads come by emptying the fridge and playing with flavours.
